Tanebocho Nakiri Premium Knife
This traditionally crafted Tanebocho Nakiri knife is a premium cutting tool made on the Japanese island of Tanegashima. It is made of 3 layers of Shirogami (carbon iron), so it is extremely strong and sharp with a smooth and convenient handling due to the cherrywood handle.
Since the 12th century, this island is known as Japan's gunsmith and has a long history of weapon craft and blacksmith families. Nowadays only two families are still in business and this knife is made by one them - from the beginning till the end during all steps of this traditional process. A masterpiece, elegant and powerful.
As with every professional knife, its special care needs to be followed to secure the sharpeness and the lifespan of this advanced kitchen tool. It should not be sharpened with a sharpening steel but can be sharpened ca. 5 times with a diamant sharpener. After it should be done with a wetstone.
Regarding the cutting surface we recommend soft cutting boards as these YOSHIKAWA boards here or you can use cutting boards made of cedar wood, which are perfectly suitable for this kind of iron.
