Marunaka "Black Label" Premium Shoyu 300ml
The special thing about this shoyu is that it comes from a single barrel, similar to a single barrel whiskey! Slightly stronger and darker than Marunaka's Jozo Shoyu in our portfolio. This shoyu made from regional basic ingredients has an extraordinary bouquet that Marunaka awards and gives them international attention on all shoyu competitions. This aroma can only develop due to the special microclimate in the Shiga province: muggy hot summers, freezing cold snowy winters.
Marunaka has been brewing using traditional methods for more than 200 years. That means here not only fermentation in wooden barrels, but renunciation of any modern or industrial machines. The tools and equipment associated with this Shoyu is brewed is otherwise only found in museums. The brewery itself is under monument protection. 100% handwork and tradition that is second to none. Not only the legendary Kikunoi restaurant in Kyoto swears by this shoyu, too michelin star chef Pierre Gagnaire is a fan.
