Kanzuri 2years Fermented Chili Yuzu Paste 70g
Kanzuri is a special fermented chili and yuzu paste condiment made by a traditional family artisan producer (also originally called Kanzuri) in Myoko, a very snowy region of Niigata Prefecture, Japan.
The Kanzuri paste is made from red chili, yuzu rind, rice koji, and salt and the special peppers are salt-marinated for several months. After their harvest, the chilis got spread over the snow and then left there for 3-4 days to begin the fermentation process in the wintertime. After they are mixed with other ingredients to ferment together.
This absolutely unique process will remove the excess bitterness and saltiness from the chili pepper while increasing the natural sweetness. The snow-bathed peppers are then mixed with yuzu rind, koji, and additional salt, and aged for 2 years - then Kanzuri is finally developed. Also check out the unique 6 years version from our shop!
The flavor of Kanzuri can be compared to yuzu-kosho, but kanzuri is even richer in umami flavor from the aging process with rice koji, and also milder in saltiness.
