Kakukyu's Hatcho Miso is a premium, naturally fermented soybean paste with a rich history dating back to 1645. Crafted in Okazaki City, Aichi Prefecture, this miso is made exclusively from carefully selected soybeans and salt, without any additives. The traditional production method involves steaming the soybeans, forming them into miso balls inoculated with koji mold, and then aging the mixture in large wooden casks under three tons of river stones for over 24 months.
This meticulous process results in a distinctive miso with a deep, robust flavor and a slightly acidic profile with hints of bitterness. It is known for its bold, umami-rich taste and dark color, both developed through the extended fermentation process. Hatcho Miso’s dense texture and complex flavors make it perfect for enriching soups, sauces, and marinades while staying true to authentic Japanese cuisine.
