Genmai Miso 200g
Whole grain rice (in Japanese: Genmai), is the basis for the dark and strong miso paste with a 2-years fermentation period in barrique red wine barrels. This locally produced Genmai Miso is made with sprouted whole grain rice and develops concentrated umami taste with notes of black olives and a fine acidity due to the long, natural maturation.
Due to the high nutrient content of unpeeled rice and the long fermentation, Genmai miso has a dark brown color and an intense aroma and is particularly high in fiber. It is suitable in traditional Japanese cuisine, for example for miso soup, miso marinade or for pickling vegetables. But it can also be used universally as a seasoning for savory dishes, sauces or mixed with olive oil on paste or with butter on bread.
