Einkorn Koikuchi Shoyu Soy Sauce 100ml
This Einkorn Koikuchi Shoyu from Berlin producer mimi ferments is made from German soybeans, einkorn, spring water and sea salt from the Algarve. The mash then is fermented in barrique oak barrels with red wine for three years. During this long period of time, during which the mash has to be stirred regularly, it develops a deep brown color and a very intense taste.
The aromatic soy sauce is hearty, strong and complex and is ideal for flavorful dishes, for seasoning red meat or game but also in salad dressing. By using ancient grain Einkorn instead of wheat, our dark Einkorn Koikuchi Shoyu has a slightly nutty and strong taste.
Due to the particularly long fermentation time, the gluten in the einkorn is completely broken down and can no longer be detected. This means that our Einkorn Koikuchi Shoyu is gluten-free even with gluten-containing grains as an ingredient.
