Ama Mugi Barley Miso BIO 200g
Barley (in Japanese: mugi) forms the essence of this delicate Ama Mugi miso paste. Barley is a grain popular and originally used in Japan. The high proportion of organic barley makes this reddish-brown Ama Mugi Miso a full-bodied, hearty miso paste with a subtle sweetness. The slightly plumy aroma and the mashed notes are the result of the one-year aging in barrique oak barrels that have been filled with red wine.
Due to the use of barley, the Ama Mugi Miso has a broader body and is a bit heartier. This reddish barley miso is suitable in traditional Japanese cuisine, for example for miso soup, miso sauces or for pickling vegetables. However, it can be used universally to refine the taste and to season various dishes and sauces.
