The Iio Jozo vinegar brewery founded in 1893 from the Kyoto province is often called the best in all of Japan. This is mainly due to the extremely high quality standards of their basic products. They brew sake from pesticide-free rice cultivated in the native Tango District, Kyoto, and so they use it to make this excellent vinegar.
