Nitto Jozo White Tamari Soy Sauce
This Nitto Jozo White Tamari Soy Sauce is not only a fantastic eye-catcher, it is also a real umami bomb! Brewed in the coldest zone of the Aichi Prefecture with extra-soft water and the very best basic ingredients, it has a subtle natural sweetness which the producer Ninagawa-san has 'tickled' out of the local wheat. The very malty bouquet of this shoyu is also supported by koji and miso notes.
Tamari is mostly brewed from 100% soybeans. During the fermentation process
it usually becomes very dark then. In contrast, this Nitto Yozo White Tamari is brewed with 100% wheat and therefore has a very beautiful amber colour. Since Nitto-Jozo is brewed with a ratio water to base mash of 2:1 (usually 1:1) to achieve a particularly deep and round taste, soybeans are not used at all in favour of the amber colour.
