Nagara Artisan Tamari Soy Sauce
This high end Nagara Tamari Sauce is brewed with local soybeans from Gifu. The brewing water comes from the part of the Nagara River where it runs underground. The wooden barrels used are over 100 years old and give the maturing that special finish. Yamakawa-san recommends using this strong tamari sparingly, it is intense and will lift up almost anything. For sashimi, grilled fish, hiyayakko (cold tofu) it is traditionally recommended but you can use it as prefered. The consistency is velvety, strong and complex in taste, a real unique Japanese artisan product!
Tamari is a specific type of brewing (without wheat) which takes much longer than traditional soy sauce. Yamakawa-san, in the 3rd generation, remains true to tradition, but also takes new steps and develops new soy sauce products, such as soy sauce pomace salt or a spicy soy seasoning sauce with habanero.
