This condiment sauce is a very sustainable product because it is brewed with the press residue from sake brewing, called sake kasu. This sauce was developed for allergy sufferers with wheat and soy intolerance. In contrast to other alternatives, the taste is also convincing, it resembles a light Usukuchi shoyu and you can also use it that way.
Producer Taisho Shoyu has been brewing natural shoyu soy sauces in Shimane Province since 1926 and has developed this product with a regional rice.
