Uji Matcha Sponge Cake

This wonderful cake is made of a green tea dough made from Uji green tea, kneaded with red beans and starch and baked to a moist texture. The uji matcha cake is finished with brandy liqueur to give it its rich aromatics and full flavor. The cake has the elegant aroma of Uji matcha and the texture of azuki beans and great fluffiness in overall. So good!
