Beside Ma-Konbu, this Rausu-Konbu from Aimono company is the Konbu (or Kombu) with the most umami and therefore ideal for making Dashi, but also for cooking Nabe dishes like Yodoufu. This premium Kombu contains lots of natural sweetness and lifts up every ground stock into a another taste-dimension, especially vegetarians or vegans will have the perfect product to develope Umami with using this animal-free ingredient.

This handcrafted and sustainably correct harvested and processed Kombu from the Hokkaido peninsula is moistened and several times after the first drying, then it will be dried again and matured to tease out the taste and Umami. Industrial Kombu is not undergoing this process and therefore has not the same depth in taste and color.
