Menma is usually made from fermented bamboo shoot slices. Mostly they are used in classic Ramen bowls as a topping with the irresistable crunch factor - really satisfiying.
The preparation of menma from dried and fermented bamboo shoots starts with soaking them in water, or sometimes in broth, until the dried shoots are soft and tender. This ramen menma, in addition to their soy sauce flavor, have a sweet yet earthy taste, and add chewiness and crunch to your ramen and also have a long shelf life. What makes menma so unique is that even after being cooked, the bamboo strips manages to retain its crunchiness. It contains also important fibers, copper, vitamin B6, vitamin E and vitamin K.
