Uminosai Premium Shio Koji 170g
This Premium Shio Koji is made with unhusked Japanese rice that has been grown
grown without pesticides and of course with the famous mineral-rich Uminosei salt.
The natural sweetness of the koji is further enhanced by the natural umami of the brown rice and gives a special depth to every dish, whether eastern or western cuisine. For this unique product there are no additives used, and also no alcohol.
In Japan, sea salt extraction was banned for many years after the war. The state then levied a salt tax, and therefore only industrially produced manufactured salt was allowed. For many years, Uminosei fought to be allowed to extract the natural salt. And thanks to these endless efforts, sea salt production was was once again allowed throughout Japan. Uminosei extracts the salt on the island of Oshima, which is one of the 7 Shichi-to islands. An artisanal, traditionally extracted quality that is also used by premium Shoyu brewers and miso producers.
