How to Use a Hangiri:

3. Season Your Rice: Add sushi vinegar while the rice is still hot. Use a wooden paddle (shamoji) to gently fold the vinegar into the rice, making sure to avoid mashing the grains.
4. Cool the Rice: Fan the rice while mixing to cool it down quickly, which helps achieve the desired shiny texture.
