Aigamo Junmai Ginjo Genshu Sake 300ml
Aigamo means duck in German and so you might want to call it `duck sake`? Take this: The rice (the local Hitogokochi variety) for this genshu is grown using a special method in which ducks are allowed into the rice fields to eat pests such as snails and fertilize the rice at the same time. This is a relatively complex method that forms a natural cycle and makes it possible to dispense with the use of chemicals.
Genshu refers to sake straight after brewing and pressing. Normally, sake is then diluted with water to a lower level of alcohol content, while Genshu has between 18% to 20%
alcohol. Its lush umami and higher acidity make this sake an accompaniment to stronger dishes, such as meat or stews. Even if this sake tastes very strong and full (yogurt and rice notes) it is not intrusive and represents the style of the Suien brewery.
Suien - `Drunken Garden` is a traditional brewery with over 200 years of tradition from Nagano Prefecture. The small town of Azumino is famous for some of the best wasabi in Japan. Wasabi only grows in very clear, fresh water and this is exactly what Suien brews his sake with.
