These flakes were made from organic red shiso leaves from Wakayama Prefecture. Red Shiso or Purple Shiso is extremely present in Japanese cuisine, including pastries. It is often called Japanese basil (perilla frutescens). The purple version is used for its powerful coloring properties (for Umeboshi plums, certain sakes, sesame seeds, etc.).
It accompanies many culinary preparations as an aromatic plant. Red Shiso is also listed as a medicinal plant and is frequently used as an anti-inflammatory, antiseptic, antispasmodic.
Its taste notes are complex, both herbaceous and tangy, with notes of basil, hibiscus, acerola, red cherry, lemon balm. These small flakes, with tangy and refreshing notes, have been delicately enhanced with freeze-dried ume plum flesh.
You will use them to spice up your mixed salads, season your onigiri and white rice when tasting, enhance carpaccios and meat and fish tartars, spice up your grilled meat and fish.
