Fukii Junmai Shu Sake 720ml
Founded in 1830 in Mie Prefecture, Ishikawa Syuzo Sake Brewery Corp. is still brewing to this day in the old buildings. What makes this brewery so special? Of course, the love of dedicated work, the love to the koji, but most of all the incredibly soft water! This water is even softer than the springs in Kyoto and because of this, the Junmai Shu Sake is also very mild, soft and round flavour. The springs are 200 m under the water and fed by the Suzuka mountain range. Ishikawajozo's sake are award-winning in Japan, and also at the Kura Master Competition in France.
This light and dry Junmai has a very nice, strong acidity and a nice umami taste. You can say this is a very balanced sake, which is not only associated with Japanese food but also with Western dishes. The great master Ishikawa-san recommends a German Pistachio Lyoner to it, can you imagine!?
